Well hello there summer!

After my chaotic day yesterday, I finally made my yummy Mexican Hot Chocolate Cookies.

I borrowed the recipe from When In Rome

Mexican Hot Chocolate Cookies
from When In Rome

Ingredients
2 1/4 Cup all-purpose flour
1/2 Cup unsweetened cocoa powder
2 teaspoons cream of tartar
1/2 teaspoon coarse salt
1 Cup (2 sticks) unsalted butter at room temp.
1 3/4 Cup sugar
2 Large eggs
2 teaspoons cinnamon
1/2 teaspoon chili powder

Preparation
1. Preheat oven to 400 F. In a medium bowl, sift together flour, cocoa, cream of tartar and salt. *note: I didn't sift. I took a whisk and mixed them together till there were no lumps. It always seems to work fine* In a large bowl, using an electric mixer, beat butter and 1 1/2 Cup of sugar (reserve 1/4 sugar) on medium speed until light and fluffy. Scrape down sides of bowl. Add eggs (and vanilla if you'd like) and beat to combine. With mixer on low, gradually add flour mixture and beat till combined.

2. In a small bowl, combine the remaining 1/4 Cup sugar, cinnamon and chili powder. Using heaping tablespoons, form balls of dough and roll in cinnamon sugar mixture. Place balls 3" apart on parchment lined baking sheets. Bake until cookies are set and begin to crack, about 10 minutes.



And sat down with my mom for a Virgin Margarita (she doesn't drink alcohol..it just about killed me to not have alcohol in it, but I'm a big girl and I survived :)

Today was however the start of my summer break and it was a good day. I pulled up our Zumba dances and danced my heart out in the yard.

That's right, I went back out there, but not without running back and forth down my sidewalk with a broom in my hand!!

I also got this little goody in the mail and was extremely happy!!

And then just when I thought my day couldn't get any better, packaged inside my moms package from my sister was a present for me. It was all wrapped up. My sister had been holding it from her honeymoon and was going to give it to me as a late birthday present even after she had done gave me money in NY.

Growing up my sister and me couldn't get along. Things she did hurt me and I did not agree with her actions, but my sister has changed and I love her more than anything in the world. I never want either of us to go through that again.

Tonight we went shopping for my grandmother's mother's day present and my mom ended up getting a couple new items and a dress to wear to church sunday. You can see the cute outfit she got tomorrow for Fashion Friday, but the dress will have to wait til Sunday :)
(I got a new dress, but I hate trying on stuff and when I got home and put it on, it was really cute but super short. I cant even squat without showing my rear end, so it will be going back and I will be getting the other dress I was trying to decide on or a different size in the dress I had. I also got a new eyeshadow pallet. Its a 96 eye color pallet :) with some really pretty blues and greens that I can't wait to use :)

Cinco de Mayo gone bad!!

I'll start off by actually telling everyone Feliz Cinco de Mayo! So FELIZ CINCO DE MAYO!!!!!

My day started off pretty good. I got ready in my cute outfit all for Cinco de Mayo and headed to school to take my English exam(which was mucho hard...eeek..we pretty much had to memorize every author in the englis textbook and what he wrote..hmm). On the way to my moms office my friends badluck started making an appearance and she tried to fall down and caught my arm in order to stay up. Luckily no one was around. Then, we went to my favorite resturaunt called Los Vaqueros which is pretty much ran by a group of family and friends (all male).On the way inside they were all staring and we was enjoying it and then she tried to slide down again. She was so embarrassed. She had her usual quesadilla and rice and my mom and me shared a chicken fajita with rice and beans. It was yummy. For dessert we ordered fried icecream on a sopapilla with chocolate syrup, strawberry syrup, honey, and of course cinnamon. It was so yummy. Sorry I wasnt able to take pics then. I left the camera at home.

After lunch, I came home and had planned to bake cookies after taking some pics of my outfit. Unfortunately cookies got put on a hold after I was stuck outside for 3 and 1/2 hours.

(Oh happy day!!)


(And here I was thinking this little dude was going to be the worst of the visitors to visit me today, but no..this next little creaper decided to scare the $#!% out of me!!!)

My dog started to nudge me and I didn't know why.I had my camera sitting on our grill and was pressing buttons to get ready to snap my next picture. I started to look arund trying to figure out what was wrong with Roscoe when next to me not even a foot away in this bush lied this horrible, creapy, terrifying, good for nothing creature)

(Trust me I am very far away, I just have a really good zoom. He would not come out of that bush. I sat outside for 3 and 1/2 freaking hours trying to figure out how to get past him and back into my house. My cell, my keys, everything were inside the house and this evil monster was gearing up to hurt me (or maybe just scare me and make me think he wanted to) if I walked by. He would move to different places inside the bush and stick that long head of his out. And he would turn his head the direction that the dogs and me were. I was sooo scared.)

(I was extremely terrified and didn't know what to do!)

(Not to mention I live in the middle of nowhere and was home alone!)

(I cried my heart out! and I roasted and roasted..I'm a tomato now)

(but remember if you can't go inside because a snake has your trapped out of your house and you can't stop crying, then you can always take pictures of your really cute new shoes. Oh man, I need to repaint those toenails..eek)

(But no matter what, if snakes terrify you and give you nightmares as much as they do me, then I'm pretty sure that no matter what you will still be doing a lot of this)

After 3 hours the snake disappeared and I heard something fall off the house and looked over to see him trying to figure out a way to crawl up my house. Which wasnt happening at all..and a little bit later he completely disappeared. I waited a good thirty minutes before me and the dogs made a break for the porch. Lets just say I got my workout for today and learned how much I love my dogs and even figured out that I can survive tough situations even if I am in really cute heels. They actually were a lot comfortable than most of my shoes :)

On with the story, when I got inside I called my mom and I thought I could hold it together but said these words "Mom, I've been trapped outside for 3 and 1/2 hours." Her reply "Why didn't you call me, what happened, you have a key". "NOOOO, SNake" And I started bawling and bawled through the rest of the story. She sympathized for me because she is equally terriefied, but when I called my dad I had stopped crying and he just laughed at me because I was trying to make sure that darn thing couldnt get in my house!

Now I am off to bake me some yummy cookies and cook me some supper. Lets hope I don't have anymore of my friends bad luck!

I'm just a bit frazzled...

Oh MY JEEZ!!!!!!!!!!!!This has been a busy week, but guess what? I only have one more final and I am summer bound :) YAY ME!!!! I found out today that I passed the two classes I was a little worried about! I was so excited when I found out that I have 2 A's and 2 B's!! I still have my English final tomorrow, but I know I will have a good grade in there :) I have ll my stuff completed for the DMS program other than going to the doctor for a checkup and getting my shot records. I however had another huge weight lifted off my shoulders when I finally told my mom that I thought it was a good idea to get a check up because I had been having some problems and really needed to get them checked out.

And then we got on the discussion that for now I need to get back on a pill because of the pain and irregularity I've been having. Although I really hate the fact of getting back on it because I was on it from the time I was twelve due to my endometreosis. I've been scared so much with the endometreosis and the length of times I was on all the different bc pills that when I get married and decide to have a baby that I will have problems.

I know call me weird, but I have always had a fear of never meeting my Mr. Right and then I always think what if I do and I can't have a baby because of all my medical issues. It really sucks. I know I shouldn't be worrying about it now, but everytime I see a happy couple and a baby or just a happy couple or just a baby this thought runs through my head. I love children with a passion and would love to have a few of my own one day, but I will deal with this when that day comes.

I'm sorry for starting off all cheerful and turning into a Debbie Downer.

Very much so..I serously hate the time 2:30 am because thats the time my granny died and Friday the 13th is never my friend. I also have this thing where I think that if I get my hopes up and start planning for the future everything will far apart so I deny what's happening for a while and will completely avoid planning for the future.

2. If you were an animal, what kind would you be?

ZEBRA :)

3. You would never catch me wearing....

A thong bathing suit..NO MAAM..I have a little too much junk in my trunk to be showing everybody. I like to keep the goodies in my trunk out of eyesight.

4. If someone posts a VLOG...do you watch it?

Most of the time.

5. What parts of your body do you wax?

My eyebrows sometimes.

6. Are you a spender or saver?

I spend, but I spend on bargains so I get a lot more.

7. If you were starring in a movie, who would you want to play your leading man/woman?

Hmm, I would go with Sophia Bush.

This look is the same skirt, tank, and shrug as the daytime outfit, but I swapped the shoes to a pair of Mia2 heels from Kohls for 12.99, a gold belt(thrifted), my gold class ring, and my set of 3 peace sign rings from Kohl's for 2.99, and a gold necklace borrowed from my mother.

Party Party Party!!

Alright ladies, you might as well start calling me the questionista, I have two more topics to discuss.

Earlier today my sister called and asked me to help her plan my nieces birthday party because she's not good at planning. My niece will be turning 11. It didn't take long for me to remember that my niece had mentioned a rodeo party. I looked up some stuff and decided we would have the back yard set up like a rodeo with picnic tables and then a place to dance. We would have the guests wear rodeo attire. We will decorate cowgirl hats, play limbo, play dance freeze, twister, stomp the balloon, etc. So I was trying to decide on what foods to cook and what kind of cake to do..any suggestions? And any other tips on games, party favors, decorations, etc?

Next,

My bestie called me to discuss her sons birthday party. He will be turning three. She wants me to help pick out a theme and help her bake the cake and get ready for the party. So ladies, what does a three year old like or what is a cute theme for a three year old? He doesn't watch tv that much, so he isn't a fan of diego or any cartoons. So what does that leave? The only thing I know that he does like is cars and dinosaurs. I need help! Any help is greatly appreciated!

After all of this I am thinking I should change my major to party planning!! I have always wanted to be a caterer and a wedding planne, but around here I wouldn't do good in that line of work, or I may be wrong because we don't have any of those around here :)
