Cake and soccer

Yesterday I decided to make a Giant Choc Chip Cupcake with Chocolate Chip Icing! I had been told that it would take a while to get the center of the cake done, what I didnt realize was how long it would take..lol. I kept trying to get it done and then it started cracking and was still yucky inside. Next thing I know the part that isnt cracked is super crunchy and the other is extremely soft. I gave up. Anyways the cake turned out really yummy, but was very crunchy around the edges. Also I hated using the chocolate chip icing with this cake because it was very hard to put it on the cake. Oh well, it was a first try. Here is a picture of my not so glamorous cake.


I'm also still trying to figure out how to make the icing perfectly rigged like it is in everybody elses pics. Does anybody have any suggestions or tips on baking with this cake pan and also about icing this cake perfectly?

Yesterday we also went to my nieces soccer game. She is so prissy..lol. After she realized we were there everytime she came out of the game, she came and sat with my mom and me. My brother told us to take lots of pics of her and send them to him. She kept wanting to get the camera and take pics for her daddy, so I finally just gave her my phone to take pics. Then she wanted to text them to her daddy and I tried to explain to her that we couldnt do that because he was over there. I told her I would put them on myspace and send them to him that way and she was like okie dokie. Here are the two pics I was told to send to him:and

He seen them this morning and his comments brought tears to my eyes. This is what he said "aww i wanna cry! i missed her first game! : ( i love my kaykay!"

P.S. She took those pics herself. Kind of good for a 4 year old right? lol


That reminds me we also found out that she is a borderline diabetic and right now they are going to try to treat it with diet and exercise.

Love the cake!

Sometimes you have to turn the temperature on the oven down a little so that it doesn't overbake the edges and underbake the center. You can try to turn it down 10 to 25 degrees and see if that works better. They use pastry bags with a large star tip to make the ridges on the top. You may have to use a stiffer frosting (buttercream like they use in bakeries), otherwise the ridges will just fall. Hope this helps :)
