Hmmph...fat you have overstayed your welcome!

I hae been kicking some booty this week. Whats been on my agenda you ask, hmm, just a little Zumba, Tennis, Kickboxxing, and Tae bo. I've been kicking some booty and I've been eating better also. I try to keep my meals healthy and my afternoon and night time snacks around just 200 calories or lower. But I'm seriously bummed, the scale is going in the wrong direction. I was supposed to wait to way myself until Friday, but unfortunately I snuck in scale time today and "i'll be darned" it has gone up instead! GRRRR. I just got a belly button piercing over the weekend in hopes it would encourage me to ge this tummy off, but I'm busting my butt and it's not going anywhere :(

On another subject, I'm still planning that lovely bachelorette party and am in need of some yummy mocktails.

I also have a recipe to share :)

I took a traditional recipe and took out a few things and added some others and it was YUMMY!!! So here you go:

Hamburger Pie

Ingredients
6 servings of boxxed mashed potatoes or fresh mashed potatoes
1 lb hamburger
1/2 cup chopped onion
1/2 cup green bell pepper
1/4 teaspoon salt
Dash black pepper
a few dashes of hot sauce
1 can green beans
1 can whole kernel corn
1 can steamed tomatoes with juice
1/2 cup shredded cheddar cheese

Directions
1. Make mashed potatoes according to box directions; set aside. In a large skillet cook meat and onion until meat is brown and onion is tender. Drain off fat. Add the bell pepper and hot sauce. followed by the salt and pepper. Stir in beans, corn, and tomatoes; pour into a casserole dish.

2. Cover the meat and vegetable mixture with potatoes. Sprinkle cheese over the potatoes. Bake, uncovered, in a 350 degree F oven for 30 to 35 minutes.

Hey sweet Carie,
Hang in there. It takes time and if you are working out like you say, you may go up a bit before really going down. (That's what my trainers have said:-) and by the way, your recipe sounds amazing! I am soooo making this.
