Okay so I decided that seeing as how I love to cook I would share some of my recipes with yall from day to day. Well last night was the Super Bowl and I fixxed two really yummy dishes and well here they are:
Taco Dip:
12 ounces cream cheese, softened
1/2 cup sour cream
2 tsp. chili powder
1 1/2 tsp. ground cumin
1/8 tsp ground red pepper
diced green pepper (as much as you want)
1/2 cup salsa
2 cups lettuce leaves or shredded lettuce
1 cup shredded cheddar cheese
1 cup Montery Jack cheese
1/2 cup diced plum tomatoes
1/3 cup sliced green onions
1/4 cup sliced ripe olives(i do not use these, but you can)
1/4 cup pimiento-stuffed green olives(which i also do not use)
tortilla chips or corn chips
(also if you dont like any of the stuff from the lettuce down, you do not have to use it, It still tastes good. I have had to make it different ways for different family members.)
Combine cream cheese, sour cream, chili powder, cumin, red pepper, and green bell pepper in large bowl; mix until well blended. Stir in salsa. Spread onto serving platter lined with lettuce. Top with cheeses, tomatoes, green onions, and olives. Serve with chips.
&&&&&&&
For the other recipe, I actually do not know the name because it is a family tradition known as the Catalina Chip Stuff..lol
Tortilla chips or corn chips(enough to cover bottom of dish)
2 cans red beans
taco cheese
diced green bell pepper
diced tomatoes
catalina salad dressing
Crush chips along the bottom of pan. Top with red beans. Top red beans with cheese, followed by the green bell peppers and tomatoes. When ready to serve cover with as much catalina as you would like and mix up.
